An Apple Taken uses the text of an early 15th century English lyric: "Adam lay ibounden". The first part is a gloomy look at the supposed four thousand years of winter in punishment for Adam's sin. The second part gives thanks for Christian redemption ending with the words of praise: "Deo gracias".

The song is scored for 6 vocal lines: Sop 1. Sop 2, Alto, Tenor, Baritone & Bass, along with a brass quintet, which is mostly used as a prelude, and then an interlude between the two parts of the text. Only towards the end do the instruments join with the voices in giving praise. The piece is chordal in style with the emphasis on the harmonic richness that is possible with 6 vocal parts.
